These mini homemade donuts are glazed with a simple chocolate frosting and topped with crushed LAY’S® Classic for the ultimate sweet and salty treat.

Donuts: In small bowl, stir together 1/4 cup warm water, 1 tsp sugar and yeast. Let stand for 8 to 10 minutes or until foamy.

To bowl of stand mixer fitted with dough hook, transfer yeast mixture, remaining sugar, egg, 2 ½ cups flour, warm milk, butter, honey, salt and nutmeg. Beat on low speed until dough starts to gather into a ball and a smooth, soft, slightly sticky dough starts to form, about 3 to 4 minutes. Add 1 to 2 tbsp more flour if dough is too sticky.

Turn dough out onto work lightly floured surface and knead for a few turns. Transfer to oiled bowl. Cover and let rise in a warm place for 1 to 1 ½ hours or until doubled in size.

Turn out dough onto lightly floured work surface. Roll dough to 1-inch thickness. Using 2-inch round cookie cutter, cut 16 rounds, rerolling scraps if needed. Using piping tip or mini round cookie cutter, cut out donut holes from centers. Transfer donuts to parchment paper–lined baking sheet, spacing about 2 inches apart. (Reserve any remaining scraps and donut holes and fry with donuts, if desired.) Cover and let donuts rise for 30 to 40 minutes or until puffy and doubled in size.

Pour enough oil into large saucepan to reach 4 inches up sides of pan. Heat over medium heat until shimmering or instant-read thermometer registers 370°F to 375°F.

In batches, deep-fry donuts, flipping once, for 4 to 6 minutes or until golden brown and cooked through. Drain on paper towels. Let cool completely.

Chocolate Glaze: In small food processor, pulse LAY’S® Classic Potato Chips until coarsely crushed.

In small saucepan set over medium heat, whisk together butter, milk, vanilla and corn syrup until combined. When butter is melted, reduce heat to low. Stir in chocolate. Whisk until chocolate is smooth and melted. Remove from heat. Stir in confectioners’ sugar until dissolved, and frosting is smooth and free of lumps.

Dip tops of donuts in glaze, letting excess drip back into bowl. Sprinkle with crushed chips. Let stand for 10 to 15 minutes or until glaze is hardened and set.
Tips & Tricks
Substitute milk chocolate with dark chocolate if preferred.
